Crock Pot Roasted Chicken
My cousin, Mary Lou gave me this recipe. The chicken is very moist and has plenty of juice for mashed potatoes or rice. (we are the rice family so that’s my pick!)
Ingredients:
1 large roasting chicken(w/ or w/o pop up timer)
1med-large onion-quartered
12 cloves of garlic-peeled and slightly crushed
Olive oil
1 lemon-cut in half
Spice Islands Beau Monde Seasoning or favorite seasoning (Lawry’s garlic salt)
Salt & pepper
Remove any bags of giblets from inside roaster, rinse and pat dry roaster
Stuff in cavity onion(I stuff as much as I can which is about half then put the rest in the crock pot), 6 cloves of garlic, lemon, salt & pepper(do not be afraid to use s and p!)
Rub olive oil all over outside of roaster, place remaining garlic under breast skin
Season outside of roaster with Beau Monde or other seasoning and a little pepper (Beau Monde is more bland than the Lawry’s garlic salt so you need to use a lot!)
Place roaster in slow cooker-Do not add any liquid-There will be plenty of liquid naturally made from cooking
Cover and cook on low about 8 hours.
