Pupetta’s Rosemary Chicken
This is my sister Kim’s chicken. The kids have always called her Tia Pupetta so to us it is “Pupetta’s Rosemary Chicken” . For me, it is pure “comfort”, especially over rice. Thanks, sis!
Ingredients:
1 whole chicken
1 lemon
Fresh Rosemary
Lawry’s (really, it is a must, the best garlic salt) garlic salt
1/2 to 3/4 cup white wine (or one little bottle from the little 4 pack wine bottles)
Preheat oven 325. Spray baking dish (large enough for chicken and ingredients but not too big to dry out all of the juice) with olive oil spray. Wash and pat dry chicken. Put in baking dish. Squeeze 1/2 of the lemon all over chicken and put the other 1/2 (not squeezed) inside of the chicken. Pour the cup of white wine all over chicken. Sprinkle chicken GENEROUSLY with LAWRY’S garlic salt. Cut fresh rosemary and put all over chicken. Amount depends on you. Cook uncovered for 2 hours. Serve with white rice. Chicken freezes beautifully. (Due to the skin being on the chicken there will be grease in the juice. You may put the juice in fridge, let it separate and remove most of the greasy part)
